And do I have a treat for you…….two classic favourites with a full Summer ’25 glow up. Starting with the ultimate egg salad, but the grown up version as well as all the ways I like to dive in to this comfort essential, followed by this year’s no churn ice cream where I basically combine my two most loved iced desserts into a new lip smacking simple frozen delicacy.
The Best Egg Salad
I truly believe that everyone needs a great egg salad recipe in their cooking armoury. And I am so in love with this recipe that I am going to say that my umami packed version is really the only one you need. While the base ingredients are similar, this is far from the old Ashkenazi egg and onion version that for some I am aware doesn’t always trigger the fondest of culinary memories (IYKYK).
For this version, I gently pickle spring onions (scallions) in a splash of rice vinegar and soy sauce while the eggs boil. With the addition of gherkins (or cornichons) this becomes a mustard packed double pickle situation of egg salad dreams, held together with a little mayo.
Perfect eaten on a crinkle crisp alongside a cocktail, spooned into a gem heart leaf (think egg cup), or liberally piled onto rye or sourdough toast with sliced radishes & dill sprigs or draped with anchovies for lunch. When I really want to have fun here, I use my ice cream scoop to serve it on crackers, crisps or lettuce leaves as a canape. Full on ’70’s style.
No Churn Strawberry & Cream Ice Cream
As a self confessed ice cream obsessive, I travel around cities via every gelateria in town, playing my own private ice cream eating competition and ranking each stop. But frozen treats are not only reserved for holiday, they are my most made dessert during the warmer months and an excellent way to use up a glut of seasonal fruit.
This No Churn Roasted Strawberries & Cream Ice Cream is a marriage of two of my favourite frozen treats. Roasted Strawberry Granita has been a Summer staple here for many years and the no churn ice cream method that I use as a base here is possibly my greatest discovery of last year (remember the Maple Roasted Banana Tahini one?). Combined together, they make the perfect strawberry and cream situation with maximum intensified flavour from the roasting and minimal effort because no ice cream maker or extra chilling time is required.
