3 Ingredient Pistachio No Churn Ice Cream

This 3 ingredient ice cream is literally going to blow your mind. I do realise I have already convinced many of you of the wonder of the super smooth no churn method, but quite frankly (and with a distinct lack of humility), the more flavours I make, the better they get.

I call this 3 ingredient, because it really is only pistachios (I use a good shop bought paste but I’ll tell you how to make your own), condensed milk (the secret sauce) and double cream.  I do prefer to cut the cream with creme fraiche, technically adding an ingredient, but I’m letting this slide as they are both in the cream family. Ok, I also add vanilla and salt.  But it’s still basically 3 ingredients……and anyway, wasn’t that a great hook? 

So now you are here, all you have to do is whip, freeze and go. 

PS this is perfect with a little Hot Fudge Sauce drizzled on top.

Ingredients

  • 400ml double cream

  • 300g creme fraiche

  • 400g tin condensed milk

  • 150g pistachio paste

  • 1 tsp vanilla extract

  • 1 tsp malden salt

  • a handful of roasted chopped pistachios for a little crunch (optional)

Directions

  • In a bowl of a mixer (or simply in a bowl with a hand whisk) whip the cream.  When it’s almost at soft peaks, add the creme fraiche and keep whisking until it s thick and holding to the whisk but not over whipped. 
  •  Pour in the condensed milk and whisk back up to thickness.  Add the vanilla, salt and pistachio paste and gently stir everything together until fully combined. 
  • Pour into a loaf tin (my favourite) or freezer friendly dish, cover with cling film and freeze for at least 5 hours. 
    Scoop and serve, preferably smothered in hot fudge sauce. 

Notes

  • I use a good pistachio paste here for ease (available on Amazon, speciality stores, or luckily for me at the farmers market). If you can’t get your hands on any, you can make your own in a blender.  Simply blend 150g pistachios with a pinch of salt until they form a paste.  This might take 3-5 minutes and you will need to scrape down the bowl a couple of times.
