Balsamic Glazed Red Onions

These are the perfect addition to salads, stirred into grains, as a condiment to simple roast chicken, the secret little bit of sandwich jhooz or as part of a grazing board garnish.

I often make these while something else savoury is happening in the oven and just pop them in at the same time.  If the oven is slightly hotter or cooler (180-200C) then either give them a few more minutes cooking time or keep an eye on them and cover them if they darken too quickly.  

Balsamic Glazed Onions

  • 2 medium sized red onions
  • 3 thyme sprogs
  • 1 tbsp olive oil
  • 2 tsp balsamic vinegar 
  • salt and pepper
  • Preheat oven to 190C
  • Quarter your onions keeping the core in tact and place in a medium sized sheet pan or shallow oven safe frying pan or gratin dish.
  • mix together with the seasoning, using your hands to make sure that the onions are completely covered in the oil and vinegar. 
  • Bake for 40 mins until caramelised.  If they brown too quickly, cover them for the last few minutes of cooking.
