A simple bitter leaf salad with a sharp mustardy vinaigrette is just the perfect accompaniment to any winter dish. Just gather a selection of your favourite radicchio and endive family, add some fresh herbs (chives are always a winner) and if you are feeling fancy, some radishes for colour, or avocado for softness. Keep it simple.
Make the vinaigrette in a jar and keep in on hand in the fridge for any salad emergency use.

2 tbsp dijon mustard
1 tbsp white wine vinegar
1 tbsp lemon juice
1/2 tbsp honey
100ml olive oil
salt to taste
Directions
- Place all the ingredients in a jar and shake vigorously until emulsified. Pour with reckless abandon over any salad or veg.
