Perfect for anyone who loves a Campari cocktail but doesn’t want to be knocked over by a negroni, this refreshingly light Italian aperetivo is equal parts dry white wine and Campari, topped up with a little soda spritz and simply garnished with ice and a lemon slice.

This recipe literally broke my Instagram………It received almost as much love as my tahini pickle magic and seems to be the gift that keeps on giving. Because it’s that good…….

Literally the perfect pick me up to punctuate the day and ideal for anyone like me who loves a little cranberry coloured bitter liquor in their glass, this drink is definitely one for your cocktail hour roster.

Alongside all the love, there was no shortage of complaints on this video about my pronunciation of this drink. Well, you can’t have it all…….

Literally as simple as riding a bicycle

Ingredients

  • 90ml (3oz) dry white wine

  • 60ml (2oz) Campari

  • 30ml soda (or sparkling water if you don’t have any to hand)

  • orange or lemon slice for garnish

Directions

  • Add ice to your glass and pour in the wine and Campari
  • Give it a stir, top it up with the soda water and add the garnish.

Notes

  • To make a batch in advance, scale up the wine and Campari and add it to a jug. Keep cold in the fridge until ready to serve. Pour in glasses over ice, top up with soda and garnish with
  • Soda water is. more carbonated that regular seltzer or fizzy water and is preferable but if you don’t have any still make it like I did in the video. It will still be fantastic.
