Just close your eyes for a minute and imagine sitting on a deck, sounds of the ocean waves crashing on the sand, the sun warming your bones, music gently playing in the background, a drink in hand. The first sip of this Summer Water will instantly transport you right to that place.
I spent many hours on the roof deck of the Surfrider in the first years after they opened. Like everything that Emma & Matt Goodwin created with such understated excellence at their California beach house, the cocktails on the roof deck were particularly spectacular. Summer Water was one of my go-to’s – the perfect refreshing cooler after a surf or long walk on the beach and an ideal companion as the sun slowly set.
Emma kindly shared the recipe with me (before they sold) so that you and I can pretend we are overlooking the Malibu Pier. Although I must say, this cocktail, in all its pink, fruit adorned glory, really does translate beautifully to basically anywhere with its slightly floral and gentle hit of citrus sparkle. Below in the notes I’ve scaled the recipe up for a crowd, because batch made drinks for gatherings with friends are a trick everyone needs up their sleeve.

Summer Water

85ml (3oz) Rosé
30ml (1oz) St Germain
30ml (1oz) lemon juice
30ml soda water
- For Garnish
1 rosemary sprig
an edible flower or two
a blackberry (I like a strawberry too)
Directions
- Fill a large wine glass or tall glass with ice. Combine the Rose, St Germain and lemon juice and give it a swirl. Top with soda and garnish and enjoy.
Notes
- If you want to make this in a large batch (for 8 people), scale up and in a jug mix one bottle Rose, 250ml St Germain and 250ml lemon juice (no ice as it will dilute it). Keep it in the fridge until you are ready to serve. Then fill your glasses with ice, pour in a wine glass amount of the mixture and top with soda and garnish and enjoy.
The Surfrider added a drop of rosewater to their Summer Water. I had a bad experience with too much rosewater and chose to leave it out in case of a heavy hand, but feel free to add a drop if you desire.
